Sourdough on Spires

Meet Mollie

The baker behind Sourdough on Spires

Hi, I’m Mollie! I’m a wife, toddler mom, NICU nurse, and the person behind Sourdough on Spires.

I started making sourdough on a whim, just wanting to see if I could do it. My first few loaves weren’t great, and being someone who’s always been a little hard on myself, I wasn’t about to let that be the end of it. So I kept trying.

Somewhere along the way, I started making more than one loaf at a time, and that’s when things really clicked. Turns out, I’m better at making bread in bulk than making just one loaf! I found my rhythm, started sharing more bread with friends and coworkers, and before I knew it, people at work were calling me their “bread plug.”

What I love most about baking now isn’t making the perfect loaf. It’s getting to share something I’ve made with people who genuinely enjoy it. There’s something really rewarding about hearing that someone loved their bread or is already asking when they can get another loaf.

I care about what goes into my bread, too. I use quality ingredients, skip the preservatives, and keep things simple. I want to make bread that tastes good and that I feel good about feeding my own family.

Between working in the NICU, chasing around a toddler, and everything else life brings, baking has become something I really enjoy. It’s a little chaotic sometimes, especially when the kitchen is full of dough, but I wouldn’t have it any other way.

Sourdough on Spires wasn’t something I planned. It just grew out of trying something new, sticking with it, and discovering how much I love feeding people.

Thanks for being here and supporting my little bread business!
